In order to get a professional result, you need this screen. The reason is that dough being living materia needs time to adjust to the hot surface in oven. Doesn't matter if you have a "pizza stone" or oven grid. It is a MUST in both cases!

PS.  When you work with this dough, NEVER brush it with anything. No water, No oil, No Nothing. Nor brush, spray or whatever treat the screen with anything. This is not complicated. Keep it simple!
